Grapes: Glera 90% and 10% of Pinot Noir.
Vinification: The CORTE DEL VESCOVO ROSE’ DOC EXTRA DRY with the added Pinot Noir touch gives our new wine both a refined rosè color and a more structured and complex perlage. Once the cuveè made with Glera and Pinot Noir is ready, a long second fermentation process takes place in pressure tanks for at least 60 days (Charmat method). This takes place to obtain a more refined perlage and complex aromas deriving from the Pinot Noir. Our team of oenologists selects only the best wines obtained to start the sparkling process. The must is stored in steel tanks where cold static decantation takes place. Once the wine has reached the required pressure, alcohol, and sugar levels, it is refrigerated, then it is stabilized by chilling at -2 / -3 ° C, filtered and checked before bottling.
Analysis: Alcohol 11% ABV. Acidity 5,5g/l; Residual Sugar 15 g/l.
Tasting notes: Light yellow color with fine persistent bubbles. Fruity, intense flavor and typical fruity bouquet of Golden Delicious apples with hints of banana and peach.
Food suggestions: Perfect as aperitif, with fresh aromas and the delicate fruity taste, make Prosecco Rosé a versatile and eclectic wine, ideal to be paired with several dishes: from light pasta dishes to vegetable risotto, fish soups, white meat, stir-fried mushrooms, without forgetting fresh and middle aged cheese. Serve chilled at 6-8 ° C.
